There's a lot of hype about superfood. How about we just call it real food thats nourishing?
I had to share this one, its an oldie that I've been making for years now. Paleo inspired but its healthy. picture may not be perfect but perfect isn't the aim hey?
I made this cake and it was devoured in minutes, and they didn't even know it was made with healthy real food.
Ingredients for the Chocolate Cake
2 medium (baked & skinless) sweet potatoes
2 tablespoon coconut flour
2 tablespoon virgin coconut oil (melted)
100g melted dark chocolate 75% cacao - I used an organic one
¼ cup unsweetened cacao powder
¼ cup organic RAW honey (melted)
3 eggs (with yolk)
1 teaspoon vanilla powder or extract
1 teaspoon baking powder
½ teaspoon sea salt
- bake sweet potatoe until soft then purée . Then add rest of ingredients and mix. Bake in pan at 160-170 for 40-50 mins or until cooked. Cool cake in fridge.
Icing - 100g coconut oil, 1 tablespoon cocoa powder, 2 tblsn coconut cream, grated choc, handful coconut flakes, 2 tspns raw honey. 1 tspn vanilla powder.
Beat coconut oil until fluffy, this may take 3 mins, add rest of ingredients and beat. Then pop on top and enjoy with yoghurt and berries!
